Quick Chickpea Salad

Ingredients

Tin of organic chick peas – drained

2 handfuls rocket leaves

1/2 red capsicum – sliced into strips

1/3 zucchini – grated

1/2 carrot – grated

Handful walnuts – chop if you like

1 orange – peeled & sliced into segments

1/4 preserved lemon – chopped into fine strips

Directions

Toss all ingredients in a bowl, then drizzle generously with olive oil, some balsamic vinegar, and a tablespoon of cumin seeds (you can dry fry these in a pan before adding to really bring out the flavours if you like).  Season with Himalayan/sea salt and cracked pepper before serving.

Serves 2 generously
