Ingredients:
1 cup Orgran gluten free all purpose plain flour
1/2 cup almond meal
4 medium ripened organic bananas (the riper the better)
1 cup rapadura sugar
80g organic butter (melted and set aside to cool)
1 tsp Bob Red Mill’s gluten free baking soda
1 tsp organic cinnamon
1 tsp vanilla extract
1 free range organic egg
Pinch of salt
Method:
- Preheat fan forced oven 175C
- Line and grease bread tin (8cm x 22 cm) with baking paper
- Melt butter in a saucepan and set aside to cool
- In a large mixing bowl sift and blend gluten free flour with almond meal, baking soda, salt and cinnamon
- In a separate mixing bowl mix melted butter with rapadura, egg and vanilla
- Slowly combine butter into flour and gently blend together
- Pour mixture into tin and bake for 50mins
- Serve warm with melted butter
